Peanut Butter Chocolate No Bake Cookies

I found my Grammy’s recipe for No-Bake Cookie’s in her recipe book, but she always called them quickies (and now so does my mom) so I’m gonna assume she knew what she was talking about. *Wink* My mom made these No-Bake cookies all the time while I was growing up, we loved them, and now my kids love them too.

No-cake cookies are a chocolate and peanut butter cookie made with oatmeal on the stove-top that requires no baking; simply drop the no-bake cookie dough batter by the spoonful onto a piece of parchment or foil.

There really isn’t much to making no-bakes; I’m sure you’ve made them or had them a million times in your life. They almost melt in your mouth and they’re just so, so good. All moms and grandma’s must make them. They must. We go through major craving phases.

Alas, no-bake cookies are pretty hard to mess up, but do be sure you let your chocolate mixture come to a good boil before removing it from the heat. The cookies may spread way too much and not set properly if you don’t let the chocolate boil to thicken.

My grandmothers vintage No Bake Cookie recipe!

Ingredients

  • 2 C. sugar
  • 1 stick butter
  • ½ C. whole milk
  • ½ tsp. salt
  • 1/3 C. cocoa powder
  • 3 C. quick oats
  • ½ C. peanut butter
  • 1 tsp. vanilla

Instructions

  1. In a medium sauce pan, bring sugar, butter, milk, salt and cocoa to a boil, stirring constantly. Boil for 2-3 minutes and remove from heat.
  2. To the hot mixture, add oats, peanut butter, and vanilla. Stir well to combine.
  3. Drop by the spoonful on the parchment paper or wax paper and let harden (they’re also real yum a little hot and melty).
