Monster Cookie Brownies

Monster brownies. Could there be a better combination of two sinful desserts? Doubt it. My willpower is fleeting when brownies are around… You throw in some monster cookies too? I’m done.

Monster cookies are an everything-but-the-kitchen-sink type of cookie. Packed with oats, m&m’s and chocolate chips, these cookies are my jam. I’ve even seen a version with crushed up cornflakes and they were so good too. Definitely make as many versions of this cookie as you can….

This recipe comes together without much effort because you get to use boxed brownie mix. Use whatever kind you like, but make sure you get the family-size box. More brownies = happier family. I like the fudgy brownies best which is what I used and it made this recipe gooey and insane.

You will preferably line your pan with parchment paper, and pour in your brownie mix prepared according to the box.

If you don’t have parchment paper, you can use foil, just make sure you grease & flour your pan well for easy removal. If you use foil, give that a spray with Pam too. You need to let the brownies bake for about 10 minutes before you add the Monster mix on top so go ahead and get those in the oven while you get the rest ready.

The Monster cookie mix is a snap! You just mix all the ingredients together in a big bowl. Read the directions below for step my step details, though.

I like to have my ingredients measured out in separate bowls for easy access once I start mixing: this is a French cooking technique called mise en place.

Mise en Place: French, "putting in place", translates to having all of your ingredients ready-to-go. Chopped veggies, measured dry ingredients, etc.

Use the mini version of the toppings for best cookie/brownie to candy ratio, in my humble opinion.

I’ve found that the best way to put your monster mix onto the brownie mix, is by the rough spoonful. Meaning, drop the dough by the spoonful onto the brownie batter, it can be a little bit crumbly, (preferably a little crumbly!).

Start keeping an eye on them around the 25-minute mark, mine took a full 35 minutes though. Insert a toothpick into the center and if it comes out clean, they’re all done!

Take them out of the oven and let cool in the pan for 30 minutes minimum before transferring to a wire rack to finish cooling.

If you didn’t use parchment paper or foil, you can run a butter knife along to edges to get them off the pan without much sticking. Use a pizza slicer to cut into bars & you're all set! Serve with some vanilla ice cream if you’re a real bad boy.

Monster Cookie Brownies

Sinful, just sinful!

Ingredients

  • 1 family-sized brownie box, plus ingredients (usually 1 egg & vegetable oil)
  • 1/3 C. Peanut butter, softened
  • 2 T. Butter, softened
  • ¼ C. brown sugar
  • 3 T. sugar
  • 1 egg
  • 1/2 C. flour
  • ½ tsp vanilla
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1/3 C. quick oats
  • ¼ C. mini m&m’s
  • ¼ C. mini choc chips

Instructions

  1. 1. Preheat your oven to 350 and line a 9x13 pan with parchment paper. Make your box of brownie mix according to the directions on the box. Pour into prepared pan. Bake for 10 minutes and then remove from oven.
  2. 2. While the brownies bake for 10 minutes, add softened peanut butter and butter to a bowl and mix with a fork. Stir in brown sugar, sugar, egg, and vanilla extract.
  3. 3. Pour in your flour mixture of flour, salt, and baking soda. Mix until combined.
  4. 4. Lastly, add the quick oats, mini m&m’s and mini chocolate chips. Drop by the spoonful onto the brownies.
  5. 5. Bake 30-35 minutes. Test with a toothpick in the center to make sure it’s done. Toothpick needs to come out clean.
  6. 6. Let cool for 30 minutes before removing from pan, and continue cooling on a wire rack.
  7. 7. Cut with a pizza slicer into bars and enjoy! Serve with vanilla ice cream to up your dessert.
