A classic spicy red sauce to have in your recipe toolbox

Ingredients

  • ⅓ C. Olive oil
  • 3 T. balsamic vinegar
  • 5 garlic cloves
  • 1 shallot
  • ¼ C. tomato paste
  • 1 T. red pepper flakes (more or less depending on heat preference)
  • 1 T. herbs de Provence
  • 1 lg can San Marzano tomatoes
  • 1 lg can crushed tomatoes
  • 2 tsp. flaky sea salt
  • Cracked pepper
  • Freshly shaved Parmesan, to top bowls

Instructions

  1. Add olive oil to a pan over medium heat. Add minced garlic and shallot. Don’t fry your garlic! Stir and cook until fragrant. 3-5 minutes.
  2. Add tomato paste and red pepper flakes, stir and cook for one minute.
  3. Deglaze with balsamic vinegar, stir.
  4. Add all of the tomatoes and herbs, salt and pepper. Bring to a boil and then reduce simmer for 10 to 15 minutes.
  5. Turn off heat, use an immersion to blend if you want.
  6. Top freshly cooked pasta with large spoonful's of sauce. Top with freshly grated Parmesan.
