Southwest Quiche

I might as well rename to blog to be called “All My Mom’s Recipe’s”.

I posted a photo with a couple of these Southwest Quiche’s a couple weeks ago and had an overwhelming amount of DM’s so I figured I should share the recipe.

Per Nonnie, this quiche does take quite a bit of time in the oven so be sure to give yourself at least an hour to bake this baby. You’ll probably want to cover the crust with foil or a pie crust shield (this one is $6 if you don’t have one). Half way through cooking, you’ll turn the heat up to 400 and that’s when you’ll want to cover the crust.

Go ahead and brown your sausage the night before too to make things a little quicker and easier for yourself. My mom always has bags of cooked hamburger, sausage, pulled pork, you name it- in the fridge or freezer all summer long ready to rock.

Ingredients

  • 1 pie crust uncooked
  • 1/2 lb sausage, browned & drained
  • 3 eggs beaten
  • 1 1/2 C. Cheddar cheese
  • 1/2 C. Sour cream
  • 1/2 C. Ranch dressing
  • 1/4 C. Milk
  • 1 can Rotel, drained
  • Jalapeños, optional
  • Red onion, optional
  • Green chiles, optional

Instructions

  1. Pre-heat oven to 350.
  2. Mix all together and pour into pie crust.
  3. Bake uncovered for 40 minutes, then turn up oven to 400 for 30 mins. May need to cover crust edges last 30 mins.
  4. Cut middle to make sure egg mixture is done. Will be wet looking.
