Peanut Butter Chocolate Energy Balls

Also, does anyone else call no-bake cookies “Quickies” or is that just my mom?

I came up with this recipe when I was flipping through my Bobby Flay cookbook. His didn’t have coconut, and also included chia seeds.

If you know me at all, you know I am frigging obsessed with Bobby Flay. He is a fine glass of aged whiskey, if ya know what I’m saying.

Anyways, Bobby and I love dates. They’re so good for you, full of fiber, and so sweet and chewy. I like to pit them, fill them with almond butter, put a chocolate chip on top, and you have a quick & healthy dessert. Two recipes in one, eh?

Back to these PB Choconut Energy Balls..

You don’t even need sweetened coconut in this recipe because the dates and chocolate add so much sweetness.

One tip if you’ve never used dates before: if you don’t have a hard-core blender or food processor, take the time to chop up the dates roughly before adding them to the blender. Then add your other dry ingredients. They are quite thick and sticky.

PB Choconut Energy Bites

Ingredients:
1 cup (packed) dates
1/3 c. oats
1/3 c. slivered almonds
1/4 c. chocolate
1/4 c. sweetened coconut
3 T. peanut butter (or any nut-butter)

Directions:

1. Roughly chop dates. Add to blender or food processer and chop til few large chucks are left.
2. Add all ingredients except peanut butter. Pulse or blend for 5-10 seconds. Don’t pulverize your ingredients.
3. Lastly, add the peanut butter to the dry ingredients. Try to distribute it evenly if you’re using a food processor. Pulse to combine well.
4. Using a cookie or ice cream scoop, scoop into ping-pong ball sized balls. You will need to use your hands to roll them into tight balls. Mine came out to 14 balls. Bobby’s recipe came out to 15. We are meant to be…..
