Baked Feta Dip

This is a play on that baked feta pasta that went viral. You know I never skimp on the pasta, but this baked feta is so good as is that you could eat it with a spoon, no pasta needed.

Even more, this baked feta dip comes together so quickly AND it’s healthy. That’s right, you can omit carbs from bread and pasta altogether by using veggies to dip.

Ingredients

  • 1 block feta
  • 1 container cherub tomatoes
  • 1/4 C. extra virgin olive oil
  • freshly cracked black pepper
  • 1 tsp. flakey sea salt
  • 3-4 sprigs fresh thyme

Instructions

  1. Pre-heat your oven to 400.
  2. Place the block of feta in the center of a square baking dish. Add the tomatoes around feta, then add the olive oil. Season with salt and pepper.
  3. Bake for 30 minutes until tomatoes have popped and are becoming blistered.
  4. Remove thyme springs, smash the hot feta with a fork, then allow to cool for 10 minutes.
  5. Serve with pita chips or grilled bread.
