Arugula Basil Pesto

Pesto is one of my favorite sauces/dips. You can make pesto several ways, but this is one of my favorites: a spicier little kicker on traditional basil pesto. This arugula basil pesto replaces some of the basil with arugula which adds a more peppery flavor to the pesto. There are so many ways to make basil pesto recipes so don't be afraid to switch it up!

A spicier little kicker on traditional basil pesto

Ingredients

  • 1 C. Arugula
  • 3 garlic cloves
  • 1/2 C. shaved almonds, toasted
  • 1 shallot (optional but worth it)
  • ¾ C. shredded or freshly grated parmesan
  • 3/4 C. olive oil
  • 1 tsp. kosher salt

Instructions

  1. Add all ingredients except the olive oil to a food processor and pulse until everything is well chopped.
  2. If your food processor allows, run on low while pouring the olive oil in through the top to combine well. You may need to stop and scrape the sides down and then finish with the rest of the olive oil. Start with ½ C. and add more to your desired consistency.
  3. Refrigerate before serving if possible for the flavors to meld together for 30+ minutes.
